Australian corn and avocado dip with damper dippers

Ingredients

3 damper rolls
2 large avocados, chopped
2 tablespoons fresh lime juice
2 green shallots, thinly sliced
1/4 cup fresh coriander leaves, chopped, plus whole leaves, extra, to serve
310g can corn kernels, drained
85g (1/4 cup) corn relish
1 tablespoon pepitas
Lime wedges, to serve

Step 1
Preheat oven to 180C/160C fan forced. Slice the damper rolls in half horizontally, then cut each half into 8 wedges. Place wedges in a single layer on 2 baking trays and spray lightly with oil. Bake for 10 minutes or until crisp and golden.Step 2
Combine the avocado, lime juice, shallot and coriander in a bowl and season with salt. Transfer to a shallow serving bowl.Step 3
Combine the corn kernels and corn relish in a separate bowl. Spoon over the avocado mixture. Sprinkle with pepitas and extra coriander leaves. Serve with lime wedges and the damper dippers.
